Need guidance on setting up a 529 plan for a child of a deceased employee

I am a business owner and one of our employees recently passed away.  He is survived by his girlfriend and his daughter.  We would like to set up a 529 account for his daughter and start accumulating funds for her to send her to college someday.  She is only 1 now.  We would like to make sure that the funds are there for her and only her can use it when she turns of age.  What is the best way to do this?
